Chicken Parmesan with Zucchini Noodles

This Chicken Parmesan with Zucchini Noodles is a tasty alternative to your regular store-bought pasta and sauce. A crowd-pleasing meal for a dinner party or the easiest meal prep you’ve ever done. “Zoodles” are also a quick and tasty addition that could be used in a multitude of ways.

In this episode you’ll learn how to cook chicken evenly and why you should buy organic, why you should make your own tomato sauce and how easy it actually is. And how to actually make your own noodles out of zucchini!

Ingredients:

  • 2 organic chicken breasts
  • Fresh mozzarella
  • 6-5 organic roma tomatoes
  • 1/4 cup of grass fed butter
  • 1/4 cup of basil
  • 3-4 cloves of fresh garlic
  • 2 zucchini (for noodles)
  • parmesan cheese (optional

Directions:

  1. Lets start off by chopping up our tomatoes into cubes and placing in a sauce pan with grass fed butter and garlic
  2. Place sauce pan on stove on medium heat
  3. While our tomatoes start to cook down, remove chicken from package and slice each breast in half ( so that each breast become two pieces, this will help chicken cook evenly, you can also pound chicken to flatten if you require bigger portion sizes)
  4. Now heat up a cast iron pan on stove with a tablespoon of butter, once pan is hot place chicken breasts on pan and sear on each side for 2 mins (until light grill marks appear on chicken, be careful not to burn)
  5. Remove from heat and set aside
  6. Ok back to our sauce, our tomatoes, garlic and butter should be cooked down at this time, now we can add our freshly chopped (keep some for garnish)
  7. Now with a masher, mash tomatoes in pan into a chunky yet smooth texture and set to simmer
  8. Slice fresh mozzarella cheese (enough to top 4 slices of chicken)
  9. Take your sauce and scoop a spoonful  into a baking dish ( where your chicken will sit)
  10. Place chicken breast in baking dish and top with a spoonful of sauce and mozzarella cheese and place in oven at 350 farenheight for 30 min (or until cooked, might be shorter of longer depending on thickness
  11. While our chicken cooks lets get our zucchini noodles prepped, this is super easy (see our episode on the how to) but you will need a spiralizer to accomplish this task
  12. Once your noodles are ready you can steam if you prefer but I like to leave zucchini noodles raw as it gives them a crunch
  13. Remove chicken

The Big Finish

Plate you zucchini noodles in the centre of plate, pour some of that delicious sauce over top and top with a chicken breast, grate some fresh parmesan on top and sprinkle with basal, please enjoy responsibly
