Healthy Poutine

Poutine is one of Brandon and Maripier Prust’s favourite meals. But how do you make it healthy? We use Sweet Potatoes for the fries, organic cheese curds and whip our own gravy using beef bone broth, mushrooms, onions and garlic.

Ingredients

  • 2 Med sweet potatoes
  • 1 package organic cheese curds
  • 1 cup of cremini mushrooms, minced
  • 1/2 sweet onion
  • 3 cloves of garlic
  • 1 cup of grass fed beef bone broth (chicken or vegetable)
  • parsley (garnish)
  • salt
  • pepper

Directions

  1. Cut sweet potatoes into wedges or fries
  2. Toss in avocado oil and place on parchment paper on baking sheet and bake at 425 until done (35-45 minutes)
  3. We use an Air Fryer which gives fries a nice crunch but baking is good too

Gravy

  1. Chop garlic, mushrooms and onion
  2. Heat a frying pan up to med heat with a couple tablespoons of grass fed butter, add in onions and mushrooms and let cook and caramelize for about 5-10 minutes
  3. Halfway through add in garlic (so as not to burn)
  4. Add in bone broth, bring to a light boil, reduce heat and let simmer for 10 minutes on low to med heat
  5. Remove from heat and pour contents into a blender, (be careful to blend slowly and release pressure if doing this with a hot liquid)
  6. Blend until smooth and add mixture or gravy back to pan and place on low
  7. Add salt and pepper to taste
  8. Optional* use organic guar gum to thicken if needed (just a little, this stuff is powerful

Poutine

  1. Toss your sweet potatoes into a bowl, add a handful of cheese curds, top with gravy and parsley for a garish
