Healthy Fresh Guacamole is a staple in our household. It’s great as a snack, as an appetizer when you have guests over, or even as a topping for your burgers. Our take on guacamole involves roasting some cherry tomatoes for some added antioxidants and of course, zesting a lime because everything is better with some zest!

  • 2 large organic avocados (3 if you are serving guests)
  • half of a red onion, diced (you can use a sweet onion if you’re adverse to heat)
  • 2 cloves of organic garlic, minced
  • a handful of cherry tomatoes
  • 1 package of organic cilantro, chopped
  • 1 organic lime
  • Himalayan Sea Salt
  • Pepper
  • * I like to add in a diced Jalapeno because I love everything spicy
  • Carrots or cucumbers for dipping


Roasted Cherry Tomatoes (Click here to learn why we roast them)

  1. Preheat oven to 350
  2. Wash Cherry Tomatoes and put on baking sheet
  3. Bake for 5-10 minutes or until tender
  4. Set aside to cool

Healthy Guacamole

  1. Cut the avocados and place in large mixing bowl (Check this out to see how to cut an Avocado like a pro)
  2. Add the garlic, onion, tomatoes and cilantro
  3. Zest the entire lime into bowl and then cut in half and use all the juice
  4. Add in salt and pepper and mix well

To Serve

  1. Cut some fresh organic carrots and cucumbers for dippers
  2. Sprinkle with leftover cilantro
  3. Eat
