Chicken and Waffles? CHICKEN AND WAFFLES! Eat breakfast for dinner with this healthy comfort meal. We’ve put a healthy spin on a traditional classic: our waffles are made using almond flour, almond butter, and Erythritol. Instead of coating our chicken in regular flour, we’ve used almond flour and toasted coconut, flash fried it in coconut oil and then baked it the rest of the way. Eat this for brunch, lunch or dinner —  once you’ve made it, you won’t be able to stop making it! *Disclaimer: You will need a waffle maker for this recipe*

  • Organic chicken breast cut into strips
  • Toasted coconut shavings
  • 1/2 cup almond flour
  • 1 tsp cumin
  • 1 tsp cayenne
  • 1 tsp pepper
  • 1 tsp sea salt
  • 1 organic egg, beaten
  • Coconut oil for frying


  • 1 organic egg, separated and only using the white
  • 1/2 cup almond flour
  • 2 tbsp Erythritol
  • 2 tbsp of almond butter (reserve some extra to drizzle)
  • 1/2 tsp organic baking powder
  • 1/4 tsp sea salt
  • 2 tbsp grass-fed butter
  • 1/4 cup cashew milk
  • 1/3 tsp Vanilla Extract
  • Pure Maple Syrup for topping
  • Jalapeños, sliced for topping
  • Arugula for garnish



  1. Combine flour, coconut and spices
  2. Set oven to 350 degrees
  3. Dip chicken in egg wash, then flour and coconut mixture
  4. Add coconut oil to a skillet and turn heat to high
  5. Fry coated chicken strips for 2 minutes on each side
  6. Place in oven and bake for 10 minutes


  1. Preheat the waffle iron to high and grease with coconut oil
  2. In a bowl whisk the egg white until peaks begin to form
  3. In another bowl combine all dry ingredients
  4. In a saucepan, melt the butter and almond butter. When melted, add the egg whites and stir until smooth
  5. Fold the egg whites into the dry ingredients. Batter should be light and fluffy
  6. Transfer about 3/4 cup of the batter onto the lightly greased waffle iron. Close and cook for about 5 minutes or until steam stops coming from the iron

Chicken and Waffles

  1. Place waffle on a dish, top with arugula and then chicken strip
  2. Add some sliced jalapeños for added heat
  3. Drizzle almond butter and maple syrup
  4. Serve!
