My mouth literally just started salivating as I typed the title of this recipe, that’s how damn good these things are. I mean I am biased I grew up eating buffalo chicken strips every time my parents took me out to Jack Astors (where all my London peeps at, you know what I am talking about). These guys are keto friendly, kid friendly, there’s not a mean bone in their body, lets get to it!

Ingredients:

  • 1 Bag of Pork Rinds
  • 2 Chicken Breasts (Organic please and thank you)
  • 1 Egg (Beaten not stirred)
  • ¼ Cup Cayenne pepper Hot Sauce (I like franks)
  • ¼ Cup of Grass Fed Butter

Directions:

Chicken Tenders

  1. Grind Pork Rinds in a blender, (grind it enough so it looks like a big breadcrumb, remove from blender and place on a big plate)
  2. Cut Chicken Breast into 3 or 4 Strips (or 2 I don’t care, I leave this one up to you)
  3. Crack that egg now and beat it up real good
  4. Now take your chicken strips and dip them in that egg wash (on both sides please)
  5. Take your strip and let it loose on that plate of ground pork rinds, flip on both sides and cover completely, (please repeat until all strips are completely covered, please keep hands and feet inside the ride at all times)
  6. Shit I forgot to turn on the oven, no need to cook above 350 degrees Farenheit on this one
  7. Place strips on parchment lined baking sheet and throw in oven for 25 or 30 min (depending on size time may be shorter or longer, just make sure there not pink inside ok)

Sauce

My buffalo sauce is simple (I hope you like butter, great sauce for Keto or whoever)

  1. In a sauce pan combine Butter and Cayenne pepper sauce (franks)
  2. Heat on low until butter melts
  3. Stir until two become one, (depending on timing of chicken tenders you can just keep sauce on simmer, and stir until tenders are ready)

The Big Finish

Remove chicken tenders from oven and place in large Bowl (something big enough to mix so you don’t get sauce everywhere), pour the sauce over chicken and mix up (if you’re brave you can toss in bowl, be brave). Chicken should be completely covered in sauce, if you need more sauce complete steps 1-4 under sauce.
